Artist Robert Field constructed a temporary fine-dining restaurant for Norsk Hostfest, North America’s largest Scandinavian festival. Because the festival ran for only 5 nights and 4 days, the restaurant had to be easily assembled and unassembled. The size and shapes of the panels made it difficult to construct them out of traditional building materials like plywood. Two-pound density EPS was chosen because of its light weight and ease in cutting. First the foam panels were cut in sections and glued together, then coated with a polyurethane-and-stucco finish to create a 5' x 15' finished section. The modular design sections can be assembled in various configurations to change the look of the restaurant from year to year. Pamela Alme Davy, Executive Director of Norsk Hostfest, said the fine-dining experience was a huge success. Three chefs were flown in from Norway for the 2006 festival. In 2007, two more chefs will be added, and seating will be expanded to accommodate 100 guests.
